This chapter she seems super evil, but she did say she was a good actor.. so how much of this stuff is true?
It could be possible that she's trying to rile up the strawhats/vinsmokes to fight BM since that's the only way to ensure Sanji's freedom.
With their current situation, the strawhats wouldn't be able to defeat BM and stop the wedding. they need help (vinsmokes- who only act in their best interest). Since there's already distrust between the vinsmokes and BM, Pudding just needs something to set them off (the fake wedding/plans to kill them). The injured Reiju adds to the affect, to show that these aren't empty threats made by a girl who doesn't want to be married.
Plus looking back, it really did seem like BM wanted Pudding to marry Sanji (Why would she waste her time listening to Sanji asking to spare them? why would opening the T box the highlight of her day, instead of killing the vinsmokes/getting a clone army?).

Pudding might be mean but I think she'll be more than an evil bitch, or I hope so. She has already implied she's getting tired of Big Mom's antics and has acted disgusted/apprehensive towards her. I don't think she likes being her puppet either.

This page is interesting nonetheless. She doesn't want to listen to Big Mom, and definitely not being forced into a marriage she didn't decide. Which is why she wants to sabotage the whole thing by killing Sanji (and fleeing Whole Cake like Lola did). I believe at the end of this she'll come to acknowledge Sanji. I'm happy Oda has spent the past few chapters showing how much the Straw Hats and Vinsmokes underestimated the Big Mom Pirates.

She was feeling underwhelming for an Emperor at the start of this saga, but now that we know her whole crews gimmick is deception and illusions that makes sense.

I'm still kind of bummed that Pekoms and Tamago seem to fit pretty awkwardly in Big Mom's crew. It's like they were a different crew than the one introduced on this arc, consisting mostly of her children. It wouldn't be so jarring if there were other people like them on the crew, but the closest is Capone who isn't even part of her crew.
