Dissappearence is simply an end to the series with a small message at the end while EoE is a personal statement by Anno to the fans, the circumstances around EoEs creation gives it a lot more meaning than dissappearence which was just 'oh fuck we have a lot of money from that series lets make a cool film'. The characters are much better in Eva (the fact that one of the characters from haruhi is a clone of an Eva character drives this home), the ending and the film as a whole really has a lot more impact than dissappearence for sure. While a bit of a nitpick the music in EoE is all original instead of reusing other music like in dissappearence.

Both films were amazing if you were familiar with their respective series, but neither is a standalone work.

Between the two and how much they contribute to their series, EoE is more important and directly lifts Evangelion into a level of its own that still hasn't been matched.

Disappearance and EoE were both satisfying endings. Rebellion UNDID the satisfying ending of the TV series and set up a cliffhanger for more sequelbaiting.

EoE is entirely about the same themes as the TV series and only really diverges from the original ending when Shinji decides that the happiness he gains from interacting with other people is more important than the happiness he finds within himself. Which is arguably a better conclusion and reflects his growth more than just learning to love himself.

Rei becomes a person by rejecting Gendo and making a decision by herself, Shinji makes a decision both for himself and the whole mankind despite everyone rejecting him and goes on with living, Asuka accepts Shinji and therefore accepts herself bringing a conclusion to her inner conflict

Yes, the departure of Evas symbolizes the departure of their mothers, kids grow up and become independent (in the original series too: "Thank you, father" (Shinji finally understand his father and no longer roots his acceptance), "Goodbye, mother" (This was also in EoE, Shinji goes on to live his own life as he wants it, he's ready to accept it even after all the pain, Shinji's truly one of the strongest characters in media)
That's why there was so much symbolism with entry plugs being wombs and all
