The human skin is actually a pretty stubborn piece of work, and the underlying connective tissues prevent it from easily stretching and bursting open unless penetrated. If a titan crushed a human in its hands, sure you'd have penetration from the inside via compound fractures of long bones and what not, but you wouldn't have a sudden hemorrhage from those open wounds because the vasculature just isn't wide enough to do that, certainly not for fluid to forcefully eject BETWEEN the fingers of the titan's fist.

However, there are 2 places wide enough for fluid to quickly exit: the mouth and the anus. While those regions of the body aren't blood-rich, internal wounds that open into the GI tract might hemorrhage enough blood so that a squeezing force could eject blood (along with other GI fluids) from those two holes. So if you were to have any fluid forcefully exit the body due to a crush injury as depicted, you'd get it from the mouth and ass. In that respect, having fluid come out of the soldier's mouth is "correct."

Another note to add: the human body only has about 5L of blood. That's not a whole lot. Certainly much less than is shown in the picture.

But let's look at this another way:
18cm is the about the average human hand length and 8cm is about the average hand width. Eren is listed as 1.7m tall as human, 15m tall as Attacker Titan. If we use a rudimentary ratio, the titan's hand length and width would be 1.6m and .7m, respectively (and the width looks like it would actually be about right in the picture if the soldier is around 1.7m tall, maybe a little shorter. Anyway, as a cylinder, that volume would be πhr^2, where r = (1.6m/2)^2 and h = .7m. That gives us about 1.4m^3 as our volume of Attacker Titan's hand if he made a cylinder with it. Now, if he wanted to turn his hand into a fist, he decreases his radius to a pretty small amount, but not small enough to compress the human body into singularity.

The average human body has a body cavity volume of .07m^3. Most of that is occupied by solid tissue, but 5L of blood still only occupies .005 m^3. That's not a lot of volume occupied relative to all the organs and bones. It's distributed around as well, so only a little bit of volume will be extravasated during a squeeze by the titan's fist, and certainly not at a velocity that's implied by the picture. The human body doesn't pop, it just goes mush.

He was probably doing prep work for seizing the coordinate. Think about it this way; even Erwin, who was autisticly obsessed with uncovering the truth of the world and also had more dealings in the capital than most others had no idea public royal family was a fake. Then, he’d seize the coordinate and give it to Eren in one fell swoop, entrusting him to do whatever the fuck him and Krueger thought was a good idea. But the attack on the walls throws everything into chaos, and he’s forced to eat the Reiss and get the coordinate to Eren before he’s discovered and coordinate is taken back.

The real question is what the hell Kruger and Grisha are aiming for if the coordinate truly can’t be fully used by a non-royal. Even Grisha’s first waifu would have been an appropriate choice if they wanted to wipe out the Mare, and there’s no reason Kruger couldn’t just save her instead of Grisha.

It might be the opposite. The nobles might only recognize a "king" if he posses the coordinate. Without it Rod is one step above commoner but he's not a legitimate heir to the throne without it. I doubt it. King Fritz/Reiss went and set up the walls on his own initiative after more than a millennium and a half of empire. His direct descendants were persuaded by his memories and didn't want to disrupt the system that he set up, but someone who already knew the truth and disagreed with him could probably keep their own will.
