Is there a problem with that? People with serious mental illnesses tend to be volatile. In the Fate route he witnesses Saber almost get killed protecting him and it triggers his PTSD, leading to his desperate attempts to prevent the same thing happen again. In the UBW route this doesn't happen.

Fate/Zero was about bullying Saber. Different writers, different portrayals of the same character. Nasu doesn't want to bully Saber so there's is less edge. Also because Shirou's treatment of Saber isn't nearly as bad as Kiritsugu's.

Saber's treatment in Zero pisses me off to no end. Urobuchi's goal was to shit on her character and break her which unfortunately he did well. Saber was very distant and aloof when Shirou summoned her it's very apparent in 2006 since I rewatched Zero's, 2006, and UBW prologue back to back in the same order.

Rider jobs in Fate and UBW you can thank Shinji for that. HF is when she actually becomes interesting.

2006 is an abomination route wise and picks stuff from UBW and HF when they don't occur in Fate. Shirou does kind of come off a bit sexist when he said "You shouldn't fight" to Saber, but that was something that's easily explained more so in his monologues.
