Seems the other day at an event with composer Ike Yoshihiro and director Satou Keiichi, he said the series was slated to air next year. Not surprising, but better than nothing.
More importantly, they said the series is planned to air after production has finished, so no more rushed animation/recap eps.
The score is still being made after the animation, Ike says he's worried he might not survive.

I would have said spring until now, but if it's being finished before airing, I'd say fall is more likely, given how long the animation period for S1 was.

Cygames had issues with the animation studio, a purge happened, but its still coming.
Hopefully they'll add the Knight MC from the game so it won't be yuri anymore.

It's not super uncommon. Just this year Shouwa Rakugo Shinjuu and Re-life were finished before airing. Coppelion comes to mind as well.
Don't remember it ever being the case for a 2 cour show though, let alone something on the scale of Bahamut.

Production of Showa Genroku Rakugo Shinjuu has wrapped up before the anime began airing. Same with Ajin TV series (CGI). Heroman also aired only after it was completely finished. And there's more.
