I think it's a little more complicated than that. I don't think he is gay in the traditional sense of of being attracted to men but I think he has some sort of homosexual neurosis that stems from his prostituting himself. If you think about it the only two times Griffith has really lost control in his life are when he had to prostitute himself and when he lost control of Guts. So when Guts leaves him it sort of reopens that old wound and Guts doesn't necessarily become an object of attraction but he begins to invades his sexual thoughts like when he was fucking the princess.

I don't think it is a coincidence that both Guts and Griffith were fucked by men at an early age. The circumstances of how each happened and how it affected them are probably meant to show the contrast between the characters, with Guts being attacked, fighting back, and gaining a psychological scar that closes him off from other people and with Griffith doing it willingly in service of his lofty goals and gaining some sort of neurosis, not to mention that this is the psychological scar that ultimately causes his downfall. If Griffith had acted calmly after Guts left he would have never been imprisoned and tortured.

I don't think Griffith ever thought about being gay or straight, that sex and (kinda) relationships were just means to an end and serve as something more symbolic then emotional like dominance, power and status.
