I am frankly sick and tired of this meme.
Hibike! Euphonium is set in a high school, correct. Its themes, however, go well beyond the realm of adolescence and bitching. I understand many people don't give a shit and simply watch it for the visuals and the cute girls and that is perfectly okay. Whatever. But don't go preaching that these are the only relevant aspects of the show.
The series addresses passion in the face of criticism, hardship, and even more than that how it conflicts with youth. Yes the drama fucking matters because it affects the band. And in exceptional cases like Reina and Asuka, this band, groomed by Taki-sensei, is absolutely everything to them. Reina, whose passion is simply for artistic sake; Asuka, whose passion is out of desperation and escape, and our main character Kumiko, torn between finding her passion and finding her youth. This conflict within her is represented wonderfully in the contrast between her two largest influences, her sister and Reina. The interaction between these characters, each other, and with the rest of the band does matter. Team Momoka, the second-years, Kumiko's friends, et al. all have important roles in this central conflict.
I could go on well past the character limit but the point is that Euphonium is well more than simply yuri pandering High School SOL. Its themes are original and genuinely meaningful, and I'm tired of seeing well-meaning people claim otherwise.

And they have decent labour practises to boot - at least compared to other studios.
Personally, I haven't liked their works much since they started working on their own IPs and adapting novels. Their current works feel a bit too realistic for my taste - they feel as if this could be shows with real people on Disney channel, and I'm not interested in teen drama either.
However, regardless of whether I like their shows or not, they deliver good products, and their quality is consistent amongst their works, probably even improving with each new anime they do.
I wish one day they grow big enough so that they can make a separate studio, in which they do other types of anime that aren't SoL/drama.

I actually just marathoned the first season today (watching it for the first time) so I could follow along with the 2nd season.
I was initially interested because KyoAni makes beautiful shit, and also I was in concert band in high school (played Trombone).
This show is a wonderful nostalgia trip. They capture the spirit of concert band wonderfully. Obviously, the drama and characters are unique to this show, but the dynamic between serious players and apathetic players is, in my experience, a real and common experience. It existed in my band, though I was one who was never involved in it since I was the awkward kid with no friends (and surprise, surprise, I ended up on 4chan).
The atmosphere of the show is really good, and I like the themes of friendship and the conflict between youth and passion (as you say). It's an important thing to consider. I actually kind of fall on the side of laziness and apathy, though. The show actually kind of succeeds in making me regret how I didn't care about band when I was in high school, though. But even though I didn't care I was still the best Trombone in our band and went to all-state and whatnot, so I guess I didn't need to care to be good. But I didn't have that youthful bonding and friendship shit going on which I guess in retrospect is a missed opportunity.
The show has good characters. Even though they rely on tropes for some characterization, there are definitely moments where they feel real and remind me of real band people that I knew of in high school. My band had way more dudes though. It's pretty unrealistic that the only Euphonium are girls (and in fact most of the band being girls). My band didn't have a single female Euphonium player, and most of the Trumpets were male as well. But I guess they have to fill the show with kawaii animu grills.

Consistently good Animation is a key.
They might not make the most memorable amazing shows (Chuu S2/Amagi Park/Phantom World) but the animation is top tier.

Lots of warm colors. They give you the feel of being there or they make it look like aplace you would want to go. The cinematography is good also. You're not just going from generic location to generic location in a blur. They usually "build" a scene well. The high school experience is portrayed well too, but more like an ideal of what we would have liked to have had.

That's what makes them so special. No other studio has achieved their level of stability and constancy in doing insignificant stuff that is somewhat pleasant to look at.
Ok let met tell you their secret:
Their secret is the fact that they do EVERYTHING in house and it allows them to progress forward.
Most studios have random stuff working on shows, many freelancers and subcontractors and each work thus pretty random gable consisting of separate quality parts and staff going separate ways afterwards.
Not so with KyoAni - all staff: animators, those who color the shows, post processing, storyboarding, direction, animation supervision, sound, all aspect of making anime - work there together (also work is split between Kyoto and Tokyo, so for example directors have to travel constantly). They also TRAIN their own animators in own animation school - where veterans like Kigami and acting KyoAni animators/directors teach them. They even own dorms in Uji where KyoAni staff lives.
There is common misconception that KyoAni is an indie/small studio. It cant be more wrong. Not only they are one of the richest, but they also one of the biggest - having over 100 permanent staff, which only likes of Sunrise or Toei can compete with in pure numbers. Most other tudios you know - Shaft, Bones, Madhouse, Mappa, Trigger whatever can only dream of such numbers and always rely on huge number of outside work and outsorcing to produce their shows. Exception staff wise are script writors, that are usually hired stuff like say Hanada or Gotoh (also Gotoh is pretty much honorable KyoAni member)
KyoAni animators are paid per hour and theres no overtime - at all. Its a calm work with good schedule where they can do their best.
The real advantage though is, that staff working together all the time - they actually advance their skills and can progress in their animation/directional techniques,
Each previous KyoAni work is test-work for the Next one. Each next work builds on fundament of the past achivemenets and stuff that worked and was tested before is perfecteed and used in the future.

Producing their shows they dont have to wonder what animators they could use and randomly gamble with freelance animators that can be working on other projects, plain refuse or be busy.
They dont have to "made up" visuals anew - if you look at their newest works like say Koe no Katachi or Hibike S2, you can notice and trace the way how they came to this visual styles and techniques they use in progression all the way through their shows: Nichijou, Amagi, Chu2, KnK, Phantom World - each makes a new step and contributes.
Its fascinating watching their skills advance and see them try things, some forget, and others improve and use later.

Sound for S1 was done by Studio2010 as most other KyoAni anime, they only got own sound studio recently thus re-recorded Hibike sound by own forces for the Hibike Movie, and S2 also recorded at own studio.
Inbetweens and backgrounds are often done by Studio Blue, a korean studio that is however subsidiary of KyoAni and before was called Anivillage.
