The issue is that, as Dragon Ball went on and wacky abilities were marginalized, everyone had more or less the same skill set. You're either as powerful, less powerful, or more powerful. It's pretty one dimensional. There just isn't much room for characters to do things unless you bring in a bunch of tertiary goons for characters to fight.

One reason I'd like Piccolo to be relevant again is that his intelligence would be a reason to incorporate things like strategy again, but even then it's easy to botch it.

Have you even been watching this arc? Future Trunks has had several fights, Vegeta saved both Goku and Trunks from certain death, Future Yajirobe and Mai also saved their lives, Bulma; Dr Brief and Pilaf helped fixs the time machine, Kibito had a sparring match with Zamasu, Whis and Beerus helped Goku and the others with understanding time rings; Zamasu's connection with Black and helped save Gowasu and kill Present day Zamasu etc. So yeah DBS's supporting cast is doing fine. You can't expect every character to be heavily involved in every arc when you have a cast as huge as Dragon Ball. That's why the pacing of One Piece and Bleach arcs isn't the best.

Literally the first episode of DBS was Goten and Trunks filler and the second one was Trunks getting his promise all the way back from the Majin arc. Hell Trunks even got a fight with his Future self, but sorry for the main characters being the main characters I guess.

I'm not denying he got a "good" boost from it, but it just wasn't massive, his power likely only doubled or tripled, he was already in the same ballpark as the super saiyans before the fusion, probably around trunks level as vegeta was quite strong.
The nail merge was more significant because nail was way stronger than kami, he was the strongest warrior and some of the warrior types were in the mid thousands which is many times stronger than kami already.
His dad's power level was likely under 300 seeing how piccolo jr reacted to fighting krillin during the tournament and years later his power level was around 200.
Fusing with his dad probably wouldn't even make him as strong as goku at the cell games, which is insignificant at this point and frankly unnecessary since plot convenience dictates the strength of a character in super to the extent that master roshi can become viable.

Kame hame ha is special because its chargable, and is a continuous beam. Its sort of like a ki spear. The amount you put in the tip effects it, plus the continued power you put into the beam is like pressing on the spear.
The gallick gun is the same, but with no real spearhead. BBA is like it, with no shaft to keep pushing. Khh is better than gg, but vegeta wont learn goku moves. Bba is a lot more bang for your buck, but can be redirected.

Have you even been watching this arc? Future Trunks has had several fights, Vegeta saved both Goku and Trunks from certain death, Future Yajirobe and Mai also saved their lives, Bulma; Dr Brief and Pilaf helped fixs the time machine, Kibito had a sparring match with Zamasu, Whis and Beerus helped Goku and the others with understanding time rings; Zamasu's connection with Black and helped save Gowasu and kill Present day Zamasu etc. So yeah DBS's supporting cast is doing fine. You can't expect every character to be heavily involved in every arc when you have a cast as huge as Dragon Ball. That's why the pacing of One Piece and Bleach arcs isn't the best.

The nice thing about Goku's defeat against Hit is that even though he lost the fight made him grow as a fighter a little bit more. He found an enemy that could improve during a fight as he always did and it was a fruitful encounter.
