Emshittia simply has no character as far as the first season of the anime goes. She is disliked because her existence confuses people.

Toyota liking her over Rem who actually got meaningful screen time and development makes about as much as sense as him liking Rom. And people really latched onto Rem.

I don't hate Emilia, but I don't understand Rem's popularity. Story wise, Rem is indeed an interesting character, but the anime failed to show why she was madly in-love with Subaru. Ep18 was really out of place.

I think the original source had more scenes to it. Rem comes across as less dignified, to say the least. The anime shows a bit of her emotionally unstable side and insecurities, but they're actually a lot worse than the anime shows.

One reason why Rem grew so attached to Subaru was because he decided he wanted to help boost her self-esteem and did things to help with that and praised her a lot, though it's suggested that Subaru actually did this to boost his own self-esteem and receive praise and gratitude from Rem in return.

Her love for him is treated as a grey thing. Good in some ways and bad in others. Though over time it seems to have developed into a more positive thing. Her behavior isn't exactly normal nor is it treated as such. At least in the written materials. She's also his mirror in a few ways. Emilia is Subaru's lifeline in an alien world and Rem has similar unhealthy dependency issues along with a voracious appetite for other's approval. At least approval from the people that she considers to be in her small personal circle and (un)fortunately Subaru is like the first eligible bachelor to be in that circle.

Translation of even the three arcs that got animated is slow as balls. There's some conversations, like between Ram and Subaru, that could really only fit the pacing of written form but it amounts to Rem getting better in some ways but transferring some of her complexes to Subaru. But you'll have to read incomplete arcs.

There is some interesting extra chapters that are translated and you can get an idea of how one sided it started out and how weird Rem is.

Emilia didn't receive much development, let alone screentime in the anime, and when she did she comes across as being bland and generic and generally the least interesting character in a cast full of colorful characters. I'm sure she gets more development in the novel, haven't read it myself yet.
I'm not saying Emilia is a shit character myself, although I admit she is a bit bland. And as a Remfag myself I don't hate Emilia and actually glad Emilia got her moment in the final episode.
