The fact that it has sakuga at all is the result of the passion and dedication of those involved, and maybe "serious" anime need to get people at the helm who demand a better product. As Wu Shu practicioner can tell that Mai`s movement are 100% authentic (also jumps exagerated like all anime) and KyoAni obviously had a proper consultant and not just drawn random "martialartish" shit like most. Theres also a lot very small details that woudnt tell much to others, like hand positions, weight, stance changes etc which are done exact to uncunny degree. Even the Qi Gung.
