But even still, SSJ3 is nothing to Beerus, even being above it as Vegeta was in a rage moment. The point was that you can still land punches and do things despite the difference in strength, which is what Trunks essentially did.

He was in a bit of a rage moment too when he blocked Black, powered up and then kicked him into a wall.

I imagine it is a Saiyan trait though, SSJ unlocked due to rage. We had Raditz and Nappa both get pissed and go all out suddenly, same with Vegeta, Goku, Gohan, Trunks etc. Rage might actually just be a short power boost, the Saiyan Kaio-Ken.

No, Battle of Gods is canon. Super is a retelling of the events with Toei. Toriyama made Battle of Gods, it is the more canon of the two events.

Its not a situation like Super's anime and manga, where Toriyama just does the storyboards and lets them decided the smaller details and things, so you can't actually determine which is the more canon of the two.

Anything Toriyama personally creates and has a hand in fully is canon, this includes BoG, but not something like GT, despite him doing the character designs and giving the name Grand Tour, but he had no other involvement whatsoever.
