It's been 35 years since this anime aired, and I don't think /a/ has ever really celebrated it. For those who haven't seen it, it was a hugely influential anime, and that influence is still being felt by the anime industry today.

thumbs up, UY is legendary, and Beautiful Dreamer is one of my favorite anime movies of all time.
I believe we're going mostly in release order, with Beautiful Dreamer being the exception. If that's the case, we probably won't watch OVA 1 until somewhere around episode 170.
Would this show be better if Ranma was the MC?

Nah. Ataru might get annoying sometimes but his rivalry with Mendo and relationship with Lum are very important to the show's story and comedy.
Ranma would have been better as a show if it had filler stories on par with UY's though. UY is elevated to classic by the anime-only material, while most Ranma anime-only episodes drag down the overall show.

Does Lum finally gets what she wants by the end of the last movie? I don't mind being spoiled details, I'm just curious if this is the kind of series that's akin to limbo/purgatory where everything stays status pro quo no matter what happens. Not that it's bad or anything, but still.

More like the show would have been better if the poor man's Shinobu wasn't the main girl and the poor mans Lum wasn't given multiple handicaps so that she could never win the MC bowl.

No idea. A few times it was fault of Takahashi and other times it was fault of her editor.
For example if I'm not mistaken he was suppose to lost his virginity with his girlfriend Kozue (and now Godai and Kyoko would be equal). But the editor told her to not do it and instead it was changed to Godai losing his virgity to Kyoko
