It doesn't seem right that someone would be able to copy the crystallization of humanity's dreams so easily. It's unlikely that Dumas can create anything that's non-replicable by Unlimited Blade Works. UBW works based on Shirou's ability to analyze a weapon. If he can't analyze a weapon, it means it's beyond his comprehension. Holy swords like Excalibur just can't be replicated by default, and Ea is in a separate category altogether.
EX-ranked weapons can't be replicated on principle. The reason Shirou was able to replicate Avalon was because he had a perfect image of it inside him after being fused with it for so long. That being said, he can only replicate it as long as he's connected to Saber.
Note here that Excalibur and Ea aren't in seperate categories. They're both classified as divine constructs, something beyond what a human can understand. You're not wrong, I'm just being pedantic.

He does has some interesting character traits.
Like being very stubborn, wanting to trush and like people but would kill them in a heartbeat if they did something he himself deemed irredeemable whether it was right to do so or not and also being a little sexist and old fasion sometimes.
But it's the confrontation with Archer that really makes him a good character for me.
Just by hearing them talk to each other you can really get a sence of how self loathing Shirou is and how little he thinks if himself, only driving his impossible ideal even further to the breaking point.

Rin follows him after she finish her studies to travel around the world with him. They become a sentai duo basically.

UBW is the most open ended of the routes but what is very clear both from Brilliant Years and the anime epilogue is that Rin sticks with Shirou and supports him whilst he follows his dreams.
There are various, Dantes is usually the most popular for that job.
Rin hangs out with Shirou and keeps being an influence in his life even in Fate and HF endings where she isn't even the heroine.
Couple that with future Rin's complete dere obsession with Shirou and that's just it.

They can't be replicated to the point you can call them a "solid" reproduction. Archer says in UBW that he could create a degraded copy of Excalibur in a suicide attack, and Shirou creates another degraded copy in HF Normal's ending.
Excalibur isn't completely out of the range of "can be [to a point] reproduced" like Ea is. It isn't as good as the Moon Cell's degraded copy, sure, but that doesn't make it completely impossible, just, I don't know, double-degraded maybe.
A far better match for Shirou than Rin ever could be.

Personally, I have problems with HF that draw it below UBW - specifically that it feels like a mishmash of Illya and Sakura routes, as well as frankly not enough of Rider. It also incorporates Rin character development that I think should have been included in prior routes, which ultimately culminated in (coupled with the massive tonal shift in storytelling) led to a very unsatisfying route and conclusion.
No, its just that Sakura's situation was so shit and Sakura refused to help herself that Shirou was able to focus his protection boner directly onto her.
None of the other heroines were in a siuation that required him to make that sacrifice.

If you mean his ideals, he was well aware true peace was beyond his powers. That's why he was attracted to the idea of the Grail and sucked up to old man Jub so he could pilfer it at the last second.
Even without its corruption, the Grail would not have been able to grant his wish. The Grail is a near-omnipotent wish-granter, but it's not omniscient. If the wisher has no idea how to make his wish control, then neither will the Grail.

It does have lore, a ton of it, but it is not really as good as other main titles because the narration is stuck to no more than dialogues.

For example, it's mentioned he's planted bombs in public places to get at targets he thought were dangerous. His kills MIGHT have manifested, but Kerry definitively did kill people who would have otherwise lived. How is a bomb somehow going to save more human lives than getting in up-close or innumerable other potentially cleaner options? Or what about Kayneth? Kayneth was broken and ready to leave the war. He posed some kind of distant, theoretical threat but not one that was really going to manifest. Kayneth was crippled, cucked, and humiliated, and he wanted to get the fuck out of dodge city while he had the chance. Killing him was entirely unnecessary. And why can't Kerry just have him sign a scroll that says "I'll stay the fuck out of Kiritsugu's way for the rest of the war and then some?" Why was killing him necessary? Kerry passes on the knowledge he obtained the hard way, so that Shirou can do better.
