I think there were different plans for Goten. Initially, Gohan was planned to be the main character for the Buu Saga, which would have freed up his old spot of being sort of a side kick with a lot of potential. After all, he went Super Saiyan with almost no effort.

Obviously, Toriyama scrapped Gohan being the main character and brought back Goku. Gohan had to go back to his old role, meaning Goten had to do something different.

It was actually pretty heartwarming, and it shows that Gohan really isn't a fighter, because even in the future, Gohan fought, but he obviously told Trunks that he always wanted to be a scholar.

They're character development episodes. Dragonball viewers aren't used to them. The Trunks and Gohan episode was to establish the status of their master and student relationship (which wasn't explored in the cell saga). It was nice seeing Trunks be happy for his master, and also sad to see Trunks cry because of his knowledge of how much he had lost because of how Black destroyed his future.

A lot of people hated that episode but honestly it had far more character exposition than entire sagas of dragonball and dragonball z

I think at some point in future trunks timeline Goku met Zamasu while dead. Goku asked him for a sparing match. Goku being Goku pissed him off and which was the final straw to throw his human hate over the edge. He then stole Goku's body.
