He fell in love with Emilia when Emilia took the time to save and heal him, even though her extremely important insignia had been stolen. It was a small gesture in comparison to everything Rem has done for Yamaha at this point, but it's amplified by the fact that she had zero obligation to him and healed him with little hope for any personal gain from doing so. It speaks volumes for her character.

The other day I was hiking alone when I stopped on the trail to admire the view. A couple walked past me, and when the girl crossed in front of me she ducked down so that she wouldn't obstruct my view. I wasn't taking a picture or anything, and it would have been an extremely minor annoyance for her to have obstructed my view, but she went through the physical exertion of crouch-walking in front of me anyways. It was a small gesture but it showed what type of person she was, thoughtful and considerate of even a complete stranger. Even though I couldn't see what she looked like, I couldn't stop thinking about her for the rest of the hike.
