Because SAO was truly original and never done before. No other animes has been able to create such a realistic fantasy world, and have it filled with such realistic portrayals of people trying to live their life one day at a time. The idea that everyone has "levels" that they get by "grinding" is a beautiful commentary of how everyone in japan has to grind themselves down at work, while "leveling up" the skills needed to put food on the table and live another day.
Truly a masterwork like nothing before it that has at least two years worth of creativity glopping inside it as it flowed endlessly into Asuna.

I cannot understand why SAO is so popular after marathoning the show its been keeping me up at night knowing that there are people who actually enjoyed it for some reason that I still cannot find.

I don't understand. The characters were bland, there was some forced love interest thing going on that I've seen a million times before and the protag is as generic as they come. What did people find good about it?
