The Born-Oppenheimer Approximation is a thing, too. Plus, modeling a wavefunction with a single Slater Determinant is, itself, an approximation. And even looking outside of the Hartree-Fock theory, Density Functional Theory also uses the Born-Oppenheimer Approximation; additionally, it uses approximations of exchange-correlation functionals for its work. So even if we get by the many-body problem, we still have other approximations to make.
