I never watched the rebuilds, are they good?
1.0 is actually pretty good; a lot of it is a 1:1 translation from the TV show, but with much better graphics and rearranging of some things that make sense.
2.0 is pretty decent.
3.0 is shit; Evangelion 3.33? More like Evangelion shitty CG bahaha got em'
They're fine as long as you remember that it's not a remake/adaptation, some characters act differently because of the former, and that it's perfectly rational for everyone to hate and/or not trust Shinji at the beginning of 3.0.
Remember to watch the post-credits scenes.
The eva freakout scene made the series for me.

If you like the original NgE, then stay as far away from the rebuilds as you can. But if you want to see what a Stanley Kubrick masterpiece would look like if Michael bay remade it, then rebuilds might be for you. Just remember that all of the subtlety and character that made NgE good is completely lost and replaced with over the top action.
