Her anger towards Ranma is justified most of the time because Ranma intentionally insults her or just tries to fuck with her. Same reason Ryoga is always pissed at Ranma really. Ranma frequently teases or insults them just to get a rise out of them. By behaving like that it makes them expect the worst out of when there is a misunderstanding.
