There was more going on there then her just being nuts. The darkening of the same scene where she said that should have clued you in that something was not right. The fact she was delirious from using the last bit of her mana to send Rider to save him was also something to note. As well as the incarnation of humanity's evil possessing her soul atm.

She likes archery and cooking outside of Shirou though. Shirou never comes back and she still stays in the club regardless, eventually becoming captain. And she enjoys perfecting her cooking on her own, rather than using it as a way to be cute. With her own recipe books and all.

She also has an interest in plants, reviving the tree in the front yard of the Matous seemed to intrigue her. Plus we do know whatever ending you get, once she is free of the Matous, she finds a mentor and relearns magecraft from scratch.
