In Zero the Assassin is used as a sacrificial lamb and then for a frontline charge by someone who didn't intend to win in the first place.

In Stay Night the False Assassin is used as a gate guard (and almost beats Saber head-on), while the True Assassin kills Lancer, Caster's Master, and only dies to Kotomine because of Grailmud cheatery.

In Extra everyone has straight-up cage matches with no subterfuge allowed and the Assassin still comes closest to killing the MC and their Servant.

In Apocrypha the Assassins are a wandering psycho and the owner of a floating motherbase, so no wonder they don't get shit done.

An actual Assassin, used as they're meant to be, would be a great pick for a Servant.
