Yes, you're going to miss literally the entire series. Avvenire is 3x 15 minutes long OVA episodes that take place after the story is pretty much "over".

When I marathoned Aria the Animation I had the flu and I don't know if it's because of that or just because I did nothing else all day except sleep for a few hours but my brain remembers Aria very clearly, as if I was there, as if it really existed.

I guess its up to personal preference. I marathoned it for my first watch-through, and I really regretted it. Forcefully rushing through a slow-paced anime gives me headaches, which reduces my enjoyment substantially.
The subsequent watch-throughs were done every alternate night, and I find myself enjoying it that way even more. It allows me to soak in the comfy atmosphere of Aria. Currently at my 4th iteration.

The DVDs look fine fullscreen on a 1080p screen, a CRT won't really do much. Can't remember how good the DVD encodes look, but the playback straight from the DVD looks fine at least. There's not really much more you can get from them, given the way the show was made.

I really enjoyed tamayura, the soundtrack is just amazing and the scenic route stuff is like porn to me. The characters can be annoying at times, which unfortunately also constitutes a lot of the humor so that's definitely a deal breaker for a lot of people. It didn't bother me much since it is at most some 2 minutes in an episode and the rest is pure cotton clouds.
Also Ayana is leagues better as Potte than Kirino, it's almost worth watching the show only for the sake of the voice actors.

But I went in November, in the low season. Tourist wise, not really an issue. You had crowds around St. Mark's, Rialto etc. but it wasn't so busy that you had to queue to get in places. You could walk right into the Basilica or the Palazzo Ducale whereas in Summer you'd have to queue for a while.
Price wise, it was slightly inflated but not wallet-kiling summer level. Plus the sooner you got away from St. Mark's/Rialto, the sooner you got to the cheaper, less touristy places.
Summer or Carnevale Venice, I'd recommend avoiding unless you really want to go then or can't go any other time. You still get clear blue skies in the low season, they're just crisp and there may be more water around than usual.
It isn't Neo Venezia, but Venice is definitely a place worth visiting. Find a quiet back alley and vanish from the crowds, and get pleasantly lost.

It's iyashikei moments aren't as strong as Aria, but since it is more realistic than Aria it really brings some cute and inspiring moments.
