Not as much as you'd expect. Honestly it's mostly "Saitama said X during Y scene".
For example when he was kicked to the moon he had a few panels of thinking that were never expressed in the anime. Personally I find it for the better.
Regardless most changes were along the lines "He hit with his left; not his right!".
Big changes would be certain characters appearing to early, but luckily they had little to no screen time changing nothing.

Saitama himself gets really boring really quickly. It's the other characters in the manga/anime which make it even remotely interesting.
