Having an ending in the first place would be a good improvement, as most of the stuff being produced nowadays is just adaptations from LN or manga still being published (and therefore having no proper ending).

Typical Japanese endings that resolve nothing and "and they'll keep fighting" endings are extremely shit.

A good ending is excellent, but I think too many people place too much importance on it. A lot of times I'll see people upset with anime/manga plots, when really all they hate is the ending and loved everything up to that point, or sometimes the opposite, where a thoroughly mediocre story has a great ending and is unjustifiably revered. As if the beginning and middle don't matter.

I'll use battle manga as an example since that's much easier to explain the concept with.

Basically I want an ending that says "MC and X amount of people went ahead and had future adventures" so that the author can have feasible reason to expand the universe and have cameos.

I fucking love crossovers and seeing how characters have changed and grown from the view of a new protagonist.
It would be like the ending to Negima where Ken hinted at UQ Holder and then we get an entire series about Yukihime.
Though the actual ending for Negima was absolute shit and I'm still mad but the hints for Negima were there, everyone got their minor epilogues and while it was shit, it was passable.

Have it actually conclude the plot and be a hype finale. Something very few anime have done since the fucking 90s.

The ending usually isn't that important to overall enjoyment of something for me. Sure, it can be a high-point of a work if done right, but I wouldn't let it being bad ruin my entire oitlook of the thing. As for what makes a "good anime", just the usual for any medium, have it be a well-constructed and engaging story with interesting characters. If the plot is good enough, it can excuse an ugly artstyle or bad animation, (see: any later works of Gonzo or Brain's Base) but on the other side of things, sometimes enjoyable visuals can carry a work. (see: most KyoAni or Shaft stuff)
