I doubt they can do a proper adaptation of one the most renowned VNs but if like Fate Stay night anime it can sparkle interest in the West, than that's good enough to push for a translation no matter how bad the translation could be.

I'm not untranslatable, it's just that no one's willing to translate it. A lot of what makes Dies Irae good is the prose, which is hard to recreate in English. It can be translated, but the result will be a translation that's even more inferior to the original than most VN translations already are. It really is the kind of game that should only be read in its native language.
