First thing you need to know is the content available:

- "Neon Genesis Evangelion", the original tv series, 26 episodes.
Must watch, the soul of the series itself. Due to a budget cut, the last two episodes do not solve anything about the plot but focus on a psychological introspection of the main characters.

- "Death & Rebirth", movie.
"Death" summarizes the original series, "Rebirth" is new content.

- "End of Evangelion", movie.
Contains two parts, the first is "Rebirth", and the second is new content.
The movie replaces the last 2 episodes of the original series, eps 25 and 26, with the ending the author initially intended.

- "Rebuild of Evangelion", 4 movies.
A re-telling of the original series slightly different in many aspects. First movie is essentially the same as in the series, Second movie introduces radical changes to the original plot, Third movie changes completely, Fourth movie isn't out yet.

My personal recommendation: watch the original 26 episodes and End of Evangelion, skip "Death and Rebirth" since it's just a summary + the first part of End of Evangelion.

After you digested the original series, go watch Rebuild. Just don't marathon rebuild right after NGE+EoE, because it might just confuse you.

First time you watch it, just enjoy the show without looking on the internet for answers, opinions or stuff. Just think for yourself about it, try to find a meaning yourself.

After, you can theorize and go looking for symbolism all you want.

I feel that a lot of its fans only like it because they don't take the full oppressive brunt of its cynicism directly and don't directly relate to Anno's mindstate while watching it. I can't stomach it because it really hits you with the anxiety and confused meaninglessness of depression, but otherwise lacks a narrative that is really made to be followed and enjoyed in its own right.
