Yeah, the exposition is just like that. It bothered me too, not to mention badly written. Kara no Kyoukai is even worse in that respect. Maybe it's because it's based on a vn/ln that is so full of dialogue, this is really the natural result.

The first episode is basically one big introduction for newfags. The dialogue doesn't get that much more amazing but it's not nearly as bad as episode 1

Not that guy, but as it stands right now, the animated Fate adaptations are pretty incomplete. Ufotable handled Fate/Zero and Unlimited Blade Works, and personally I thought they did both really well, but they skipped over the route before UBW, and they haven't done the route after it yet.

It's kind of like watching The Two Towers. It's a good movie, but you don't have the whole story.

Yeah, the stories aren't that great anyways, so I don't see how that is a problem. There are vns with great stories like Forest, Baldr Sky, Cross Channel, Umineko or SubaHibi. But fate vns? Those novels not only have great stories but utilize the medium in a way that couldn't be tranfered to any other.
