I learned about S-rank from video games. I've been watching anime for decades and can't think of a single instance where the same concept came up or was explained. I'm sure I saw it but I can't remember.
So basically, they had C,B,A but needed something higher. The reason they went with S, and why many other ranking systems do, is that the letter S is aesthetically pleasing.

Like, in MBAA / MBAACC / UNIE:L / FC and Fate/Codes you CAN get an ex ranking if you get a P victory with 2 reversals (shield bunkers), and finish both matches with an ex special (in FC if you use your R1 attack, it automatically disqualifies you from the achievement)

It was already stated why it's "S" several times. It stands for "Special", and isn't just in anime or Japanese things. It's a rank above A, with A usually representing the expected/usual top of a ranking system and S for things that somehow manage to surpass that.
In other words, it's for Special cases that fall outside the norm.
Also, when I say pray it follows normal procedures, I mean like, really, you better fucking pray. Chances are that, even if the manga gets popular, with the crash and burn of 2 out of 3, there's no way they're gonna risk any more unless there's a guaranteed payoff / consumer base.

I usually don't watch the epsiodes and rather just watch sound webms, last episode was the first i've watched in full, i will probably marathon the series once the BDs get released since this has been a pretty good adaption (not perfect though) so far and i want to support it (season too pls badhouse). That said i can't wait til the series finishes and hopefully the redraw and webcomic get back onto a better schedule

Yu Yu Hakusho explains it. It's the first time I understood why S was S rank as a kid. It simply means they're "special." As in the regular ranking system doesn't apply to them.
S is the next rank about A but it's not inherently the next rank above A. It's a special rank reserved only for the special.
To give an example, someone like Tohno Shiki could probably count as an S class (taking a situation where his brain does not overload).
He can basically kill anything making him a huge threat to anyone, but he's still just a human who could be obliterated by ranged attacks from A ranks, or even a gun if he's not prepared.
From that description you could very well imply S could be weak, since the subject just needs to be different.
Such as a slime character being invulnerable to most damage but doesn't have any presence. Mangos and animu wouldn't put it at S rank though so it definitely does imply some semblence of power.
I don't quite agree with the second guy's example but I was implying S rank is a break from the mold. They're strong enough to stand above the regular ranks which is why a special rank had to be made.

To reiterate something I said in a previous post, S rank isn't inherently above A rank. That would imply they're a part of the regular rank system which would degrade S rank and essentially everyone moves up rank. What should be A is now S and what should be B is now A.

To be honest his power is his ability to instill fear in his enemies who mistake him for Saitama. At this point he keeps enemies in check simply by existing. That's pretty important. Without him there would be a lot of trouble.
