Now in DB manga and Z Goku wanted to train Uub because he wanted to fight Kid Buu again, his most powerful opponent (not taking into account Super Buu/Buutenks/Buuhan, because obvious reasons).
Goku never wanted to train a student, he wanted an opponent. It's canon in both anime and manga.
So the conclusion the end of the manga and Z isn't canon anymore.

Goten seems to enjoy the slow country life and has never shown interest in fighting outside of competing with Trunks and that time his mom got turned into an egg. This version of Trunks is not the same as the edge queen alternate universe Trunks with his "muh androids" problem. Trunks of the current timeline just enjoys being a spoiled rich kid, playing pranks and going out with a 40+ year old woman turned into a child.

Face it, only relevant characters in S are going to be Goku and Vegeta. Not including whatever new characters get dragged in. About the only other old character I could potentially see as being interested in joining the fun is Piccolo.

Nothing in DBS has outright retconed the last few chapters of Dragonball. If anything it's reinforced it. We don't yet know what happens in those 10 years. We also don't know if DBS will go beyond those 10 years. They can easily incorporate Uub and Pan into the story once they get to that point without breaking the per-exisiting story.

Is there a reason why he couldn't? Goku did it. And he started with a power level of 10. Even without saiyan hacks, by the time he got to piccolo jr. that dude multiplied his strength 1,000 fold. Uub has had NO training so far that we know of. So his strength is literally just his raw power. With some lessons and some workouts he has so much potential. But he's meant mostly as a bookend character to show that Goku's ready to pass on the torch anyway, so none of that matters.
