Actually, the dojo was probably half the reason he gave a shit about Akane. Look at how proud Ranma was of being the heir to his family school, of course he'd want to continue it. In the life of a martial artist, there comes a time when you can only improve by teaching others less skilled than yourself. Ranma probably won't hit that point for ten or twenty years given the lolsorandom rules of his universe, but eventually the well of secret techniques runs dry and you have to start from the beginning again, improving what you already know by teaching it. Had Cologne offered him a similar future but with students closer to Shampoo in potential, he'd probably be on the first boat back to China with them.

I thought I was the only one that liked the OP.
I really liked the ED too.

As it stands, I like it as much as Ranma right now. The comedy is greatly subdued,, but I like the atmosphere and some of the characters better. Sakura is pretty much the antithesis to Akane. I hope the cat thing doesn't turn out to be shitty. Narrator adds a lot to how good it is too.

Maison Ikkoku seemed to be pretty big too, although it's a completely closed story that got adapted to the end, so I guess there was never much demand for more material.
