Didn't want in the war, opted out first chance she got, didn't want to hurt anyone, didn't have a wish, when she was a master for a few days she left everything up to Shirou because he was the man with the plan. It's like some combination of Waver and Uryuu in a sense, where someone got into the war by coincidence whether they so much wanted it or not, except they didn't feel like it. Might not be suited, but it came in handy at least., allowed them to grow at times.

It's not like she's pretending to be a master, she legit opted out.

Sakura had too much regeneration to die from what Rin had left in that moment since she blew up her Zelretch knife to get that far. She just had a plain metal knife, and even seperating her head from her body couldn't kill her previously when Gil did it. Sakura would have healed, and the town would have remained doomed.

However because she appealed to Sakura's humanity and finally said what she's been holding back all this time, Sakura fought back against Angya, and stopped him from getting any further long enough for Shirou to cut the connection. Because Rin chose her family and love over her magus and cold hearted self, a path was created.

Other servants can also beat him depending on factors. Ataraxia even shows that most servants have some potential to beat anyone else if their strategy goes off in the perfect way.

Medea could have controlled Saber to beat Gil under some chances, Archer uses knowledge of Gil to blindside him in the right way, Cu gets very lucky, etc.

It depends on how serious Gilgamesh is, the scenario in which you fight, how much of a factor luck is, etc. It's just "How possible is it", and in most cases it has a chance of happening at least.

Only a half-ass says it isn't possible at all, and doesn't try to figure out the proper path forward. Gaining knowledge of the enemy servants and figuring out the perfect strategy, while also getting very lucky is the key.
