Only in its introduction they said Goku used it before when he trained with Kami. The "reason" it was too intense was because of a concept Toriyama had made way later which is "Gravity."

That's not what an asspull is. An asspull is when you have an already established set rule in the universe, and out of nowhere those rules are broken for some completely random reason that defies logic. Star Platinum being able to stop time is an example because the whole series you see the extent of star platinums power, and then in the final battle it just all of a sudden develops the ability to stop time. The timechamber was a newly introduced concept in the world of dragon ball that had ties to previous arcs in the story. Calling it an asspull is like saying any time a universe does any sort of world building would be an asspull. Asking why didn't they use it before only creates plot holes(which the story addresses so it isn't a plot hole either) not make it an asspull.
