Guy still patrolled the town every night, trying to save everyone, even Kotomine called him naive trying to have it both ways. His ideals died because "A hero of justice should never take a chance with lives, he should always eliminate the one to save the ten" he believed, if it might lead to a worse disaster.

He chose to take a chance, trying to save the one and the ten. Only to be crushed in the end as he realized he was being naive, he had to make a choice at some point.

However all throughout he was trying to save them all until he reached that point. He was patrolling, doing his best, going out every night. He didn't stop trying to save everyone there, it's just that his ideals died, because they did not allow for such a reckless action. Go back and read the route; Kotomine explicitly says he's still half-hearted and trying to have it both ways, he told the kid that wouldn't work out, it would lead to a fall, but that's also why he sees a bit of himself in the kid at a certain point. Because Kotomine himself for the longest was also the same. Trying to live as a righteous man, yet he enjoyed what would be called sin, he was a bit torn between paths, especially during the 4th war. It was at a certain point that Shirou who was trying to save both parties there, finally had to make a desperate call.

Go back and read the park scene especially; Shirou didn't know anything about Shadow so much at that point, just "Sakura might be controlled by Zouken, she'll be fighting in the war, Zouken might make her hurt someone, I need to kill her before she accidentally hurts someone". The entire choice was stupid and pretty anti-Shirou, yet that was the choice his ideals were railroading him into. Either direction he goes, someone Might die, either way that kills ideals, he picked the path without certain death and tried to take a chance.
