I guess I should have asked this question two months ago, but will I enjoy this anime if I haven't played the game but have a passing interest in the history of WWII. I ask because I only just found out that the anime's plot is unrelated to the game on account of the game having no plot.

The anime is catered heavily towards an already established crowd of the game's players, so it leaves out a lot of information and plays on some fanon jokes.
It may be good as an introductory material for the game, but as a show by itself, you might find it a bit lacking. Try it until Episode 4, and see how you like it.
On that note, the game has tons of playful references about the IJN vessels, and gets most of them right (and some erroneous, exaggerated, or biased). If you're enjoy history for history's sake, it's a good way to go.
