To mention one not already posted, I was pretty impressed with Log Horizon's world building. It was the first time an MMO anime felt remotely interesting to me, despite the one-dimensional characters.

Have you read the novels, or even got past the first dozen episodes of the anime? LOGH doesn't explain everything up front; it assumes you are paying enough to fill in the blanks. Later on it has a number of episodes about the more mundane aspects of life in the Empire and Alliance, as well as a few info dumps presented as historical documentaries.

Kyoukai Senjou no Horizon has some ridiculous amounts of worldbuilding. Raildex also has quite a lot, maybe Mahouka if you consider magic explanations to be a form of worldbuilding.
