I felt that Sakura and Rider have a great dynamic in hollow ataraxia and I wish it was expanded on because they were both bouncing between flat and great in the stay night portion. Some scenes they were boring and I was more interested in others, in different scenes I couldn't get enough of them.
Rider might be better on her own but she's too dependent on Sakura and that's a flaw in her character, she's built to be Sakura's friend and it'd be strange if they suddenly were taken away from each other. Similar to ZRider and Waver or Rin and Archer

I disagree with this assessment.
Like, you can have a myriad of stories about Sakura working as the club president and those scenes in Hollow are the best. Or her friendship with the priest who replaces Kotomine, and how he and Rider help her relearn magic, which is good. Or her taking over as Supervisor in Fuyuki. She is a good character in that you can have multiple story hooks that can be either mundane or supernatural, and can carry it quite well.
With Rider, there was all the fascinating stuff having to deal with her backstory, where we find out that she became a Heroic Spirit thanks to empathized with a human being. Plus she is one of the rare Servants who actually fits well into society beyond the grail war.
Excuse me if this will sound rude, but you'd have to be literally blind to not see narrative worth in those two, or let your dislike for them blind you to the great characters they have. Which people in this fandom tend to do, so I can't blame you. Sure, they might not be as in your face as characters like Gil or Alex, but that can be good.
Characters that overpower everyone else are tiring, and take away from good synergy. I would rather have characters that can have good chemistry with others but still have agency, then ones who suck up entire scenes to themselves.

And Arcueid can also just kill Cu repeatedly before he can even use Gae Bolg for the sole reason that she is far more powerful than Servants on the most part.

It is. People go on about how boring Sakura is, but she has varied goals beyond just magecraft. She likes archery and cooking, taught herself how to treat trees, has like several self-help books, the works.
Hell, Nasu makes Medea and Sakura like freaking buds in both Hollow and Tiger Coliseum, it's a wonder why he made a random bishop and Rider giving random pointers instead of Caster.
Especially when he has Caster herself say she has great potential, which enriched her character on top of th as t with the advice she gives Sakura and Shirou about how to live as magi. Just feels like Nasu shoots himself in the foot with her development, and I can't fathom why.

I read quite a bit faster than the voices can say the dialogue and in the end it only ends up as distracting and breaks my immersion. I end up just skipping past them in pretty much any VN I read.

A VN isn't a visual medium like an anime is. A VN is, first and foremost, a novel. Meant to be read. Type Moon VNs aren't animated beyond character movement and expressions, there's no reason to let the dialogue all play out because it's just reciting what you've already read.

Half the time anime characters are just standing still and talking though. Anyway hearing the voices gives extra emotion and shit. I don't see any reason not to play them but impatience.
You could perhaps make a more convincing case had the Fate VNs been developed with the intention of being accompanied by voice tracks to begin with, but this is not the case. The essence of Fate is delivered through the text and various visual features like backgrounds and sprite effects as well as music. The voicing is only an afterthought. There's nothing wrong with trying to experience every spoken line of dialogue, but it should be understandable that many others see the VN as something to be read, rather than something to be listened to.
That's exactly why I don't listen to them. I have no interest in listening to the voices of people standing around talking.
Now, voices in, say, a fight scene like Saber Alter vs Rider or Archer vs Shirou? Sure. I can see liking that, even if I don't prefer it.
But to me voices in most scenes add nothing beyond being a time waster.

Fate and Tsukihime are definitely VNs meant to be read first and foremost. In fact, when I read it there wasn't even a voice patch. It didn't exist.
As for Tsukihime, I think the insanity segments just wouldn't be as strong for me with voice acting. Maybe it's because I'm a huge /lit/fag, but I find my imagination does a lot more than any acting can.
I think it's fair that we respect each other's opinions on how they prefer to experience the genre.
