The ideal path is save everyone, but that's always impossible.

Well the doujin has Kiritsugu going 'overseas' and failing again. Taiga waited at the docks to pick him up, so that's why he's so tired since he just got back from the trip.

That said a full SoL would still have a melancholic feel to it. But it could also have Shirou beating up bullies and hanging out with not-totally-a-dick Shinji. It'd be great.

Sakura was the reason he didn't become full stop depressive after Kiritsugu died. He just doesn't realize it (take her for granted) until he nearly loses her. She was the one, according to Shirou, who made his place a "home" again. This is pretty huge.

Taiga also roots for Sakura the best because she wants them to live in that house. He'll leave in other routes, but not HF. HF in general dealt about family.
