Honestly, I don't think either one is better than the other because they're two entirely different things

However, I think people tend to gravitate towards Zero more because it's probably more what they were wanting out of the concept of "Famous people from history and legend fight each other." The masters were generally much more prepared and/or more powerful, the Servants tended to interact a bit more other than for the purposes of just fighting (especially Saber, Gil, Iskandr and Deermud), and you just got to see a lot of personalities and differing ideologies and goals at play. Stay Night can't portray that as well because of its focus on Shirou.

Anon, very few of Zero's cast can be considered "mature". Kerry had the logic of a child, Kariya was delusional to the point even a middle schooler would be ashamed, Fastwheels was as petty and self-absorbed as any Nasuverse Magus, and there's absolutely nothing mature about the middle schooler.

In fact, when you get right down to it, Rin in Fate/stay night was more mature than any of Zero's magi simply because she had no ridiculous expectations or childish delusions about her place in life. She knew exactly what she was capable of, what her position in life was, what kind of world she lived in, and accepted it all without complaint.

Tsukihime is semi-linear. You have to do either Arc or Ciel, then you open up Akiha and Hisui. You have to complete Hisui to get Kohaku.

You need to get all five endings to get the last scene though, which applies to all the routes.

I don't know what you consider "basic world history" but for me it seems like the only Servants you could recognize without the help of a wiki would be Arturia, Herakles, Lancelot, Medusa and Iskandar if he was called Alexander the Great.
There are also Servants like Medea and Gil who aren't exatly obscure, but since there is so few works of fiction where they appear I doubt most of the people would know who they are even if they hear their names.

Not really, no. And I am not even one of those arguing that F/SN is better than F/Z.

What F/Z has is an older cast on average as well as literally darker visuals.
But the characters are not mature. Not even remotely.
And this is even tied into the plots and threads of F/Z. Kiritsugu is called a (man)child repeatedly throughout the novel. It's not wrong to call him that.
Urobuchi jokingly called Kariya a chuuni. But needless to say Kariya was never behaving even remotely maturely.
Waver is genuinely the least experienced master of all the grail wars, with incredibly little knowledge of how the world outside the study actually works. Even Shirou who barely knows squat about the world of magic had more life experience and intuition than Waver.
Rider was a manly man with bravado in excess. But fuck it if he wasn't really a manchild aside from how he had strength and charisma.
Lancer is mentally scarred from having been cursed in the middle of his adolescence, and it reflects on his character. Though he gets some points for trying to avoid his past mistakes. But then he loses points in how he is so hellbent on his honourable battles as a result of his stubborn love escapades ruined his life.
Kayneth and Sola-Ui are some of the most naïve fools of the franchise, with an unusual inability to comprehend anything beyond their severely lacking expectations of things.
Irisviel is probably the most impressionable character of the franchise, and is literally not far from a child. No matter the accelerated growth, she is very naïve and impressionable and without much of any life experience to note.
I don't really know what to say about Ryuunosuke and Caster, but I would hardly call them mature.
And Saber is no mature in F/Z than she ever was in F/SN. If anything, it's only in F/SN Saber matures as she has little to no character development throughout all of F/Z.

Fate/Zero is indeed darker in tone. And the characters are older. But no matter the trolls, the way people have been calling the cast so mature is just amusing if anything.
Tokiomi being a fool or not, he and Risei are honestly about the only mature characters in all of F/Z. The latter not being featured much. All of this disregarding Gilgamesh of course. It's not as if he can't be mature or immature, it just feels odd to apply these descriptors to him as he lives by different standards.
But the notion of F/Z's characters being mature is a joke. And the novel doesn't even try to pretend that they are. It's the opposite even. It deliberately tries to show that they aren't mature but it seems like people don't like to acknowledge that part much.

What people really meant by mature weren't the characters, but how the show felt as a whole. It didn't feel like juvenile shit unlike the UBW anime. They spend entire episodes going to school, cooking and going on "dates" and it just doesn't match up with the mood when they decide to be serious. What Fate/Zero DOES have is that it manages to minimally develop all the characters it portrays. Kiritsugu is obviously the "main character", but we get to see all Masters and Servants and how they get into the War. What are their motivations, what drives them.

Fate/Zero can do this, MUST do this, because it's a prequel. We already know how this is going to end, so we need something to attach to so we can care about what's happening.

In Fate/Stay a lot of the story works because Shirou is the main and he knows NOTHING about what's going on. It works better in the VN as you slowly figure out who the enemies are and what do they want. Not being able to go into long thought monologues we have mere moments to follow what's going on and that makes the characters seem a bit shallow.

In Zero we know what everybody is doing and why they're doing it. We know Gilles is insane and wants to get to Saber. We don't know who Medea is (yet, though the last episode pretty much blurted it out), we don't know what the hell is her game, what she wants, why is she there, wether Kuzuki is her "real" master, why Kuzuki agreed to be her Master, etc etc etc.

What you're asking for is a merging of the two routes and we already got that with the original Deen series trying to do all three Routes and utterly failing. She's around because she's Shirou's servant, but she's just a weapon in this story.
