She was crying after she killed Shinji, read the scene again. And when she abducted Ilya, it was Ilya herself noting that her behavior was odd, including the fact she was shaking over Rin's unconscious body and hesitating killing her. If she was really a monster who enjoyed feasting on people and wanted to take vengeance on the people, then Fuyuki would have a lot more than the 50 or so missing people. Ilya even says she took on the Shadow to stop it randomly running around and she goes notably silent at that. Zouken also noted before this on one interlude that Sakura's hope and will kept the mud back, so he had to troll it out of her with Shirou.

It was that she was running away, and feigning a mask of being an alternate personality, because she was breaking down, which is where Kirei's statement about her rings true. She was still undergoing some serious shit becoming the grail, and it effected her emotionally, plus the blackening does pollute souls, that much was stated in CM3. Its not just that Sakura was just some crazy person, otherwise her reactions in Liberation don't make sense. She wouldn't express guilt and apologize or say she didn't deserve to live if she liked murdering people.

Also, where did people get the idea Shinji apologized post UBW, Shirou just notes on his own that he and Sakura got along better, but he doesn't know about the skeletons in their closet, so the statement is pretty superfluous. At least, Shinji still doesn't have the courage to tell Shirou and Rin what was going on with Sakura, and Nasu said he didn't have any fundamental changes, just that he felt better about himself. What it sounds like is that he doesn't actively act mean toward her anymore, from what Shirou can see, Sakura always treated him nicely, so that shouldn't be part of the equation.

She does literally say when Rin asks her if she wants to give up the power that she couldn't, even if she wanted to.

There was more to this than people realize. Nasu wasn't particularly subtle in saying so, because in the scene Succeed from Deep on day 14, when she was undergoing the blackening process, it noted that she was the King of AM, but also its slave. Meaning she wasn't this dark mistress of evil at all really, but the result of an already broken system.

Actually during the scene, she defiantly took his punches and told him to stop. Her muscles were torn at the time, and she was binding them together with mana, so it's understandable that she didn't fight back both because she pitied the guy and she used all her strength just walking back to the Matou residence. Shinji starting punching her because she told him to piss off, and knocked her out from behind when she got in the house. Besides, from the scene itself, her killing him was automatic, and she did it before she realized what happened.

See, these are the extra details that people tended to miss by not really taking the time to understand the characters.

Another example, the reason she tells Shirou that she hates the Matou magecraft is because it only takes from people, and she hates that. Her usage of magecraft in Hollow notes she loathes her powers because it takes from people as well, meaning her real personality doesn't want to hurt others. What happened in HF was the result of immense stress and a complex situation.

She is like the person who has a white mage's soul, but was born with powers that don't fit it and had the drain attribute permanently engraved on her on top of that. Then gets all the world's evil grafted onto her soul. Sure says something that she even bothers with magecraft post story.

Why can't I apply my moral standards on a world of magic? The only thing's I'm concerned with are emotional states of people and the various ways that you can bring about those emotional states. If a magical spell causes someone to feel pain then that's all I need to know, I don't need to know the actual magic. Sakura's a pretty decently written "Broken character". She's not polarized as a character you should pity, characters, namely Rin and Kotomine, call her out on her falts during her breakdown period.
She's frustrated and is pushed over the edge when she feels like she'll lose her only joy, Shirou, because she was dealt a shitty hand. After finally getting the only thing she wanted she destined to die soon after and he'll be left with her sister that was given everything she didn't have.
Also, her relationship with Rin is well done. She's not necessarily angry at her but, is taking out her rage on Rin because she was the one person she felt should've been there for her but wasn't even though they cared about each other.

I don't care if you don't like Sakura but, she's pretty far from no "personality" and is one of the better Fate characters

In the scene with her and Kariya’s death, the first draft of the plot was really too inhumane. After the author of the original work scolded him with “What color is your blood, anyways!?” it became one of the few scenes that the author stopped. So in the end, Sakura’s monologue was very mild and calm. …It was like that. No, really.

Sakura’s body does indeed have fitting potentials to become a magus. On this matter she was far better than Kariya and his elder brother Byakuya. Yet, it was inevitably a potential more appropriate for a magus of the Tōsaka brand of thaumaturgy, with fundamental differences to the thaumaturgy of the Matō.

The black mud in the Holy Grail contaminates the souls of those who touch it. It goes without saying for mere humans, and supernatural beings like Servants are no exception to this either. The contaminated person's personality reverses toward the orientation of evil. This is madness caused by touching Angra Mainyu. This is called "blackening". There are those who can use the black mud as part of their own power thanks to the properties of its contamination and those whose powerful egos have stayed back its mental pollution.
An example of the former is Matou Sakura and the latter is Gilgamesh. The blackened Servant is incarnated by the power of the Grail so the more concrete ties to the physical plane turns them into powerful beings.
Their physical interference power increases but at the same time they lose the ability to return to spirit form.
Also, as they no longer bother to restrain their magic energy consumption, their fighting ability jumps significantly. This momentum can be compared to a runaway train.
Because they are in that state, fine control is not possible, but in exchange, their destructive power increases.
They are fearful beings inflicting havoc and death upon the world. These are blackened Servants.

Kariya Matou
Berserker's Master.
Second oldest son of the Matou family, one of the three founding Mage familes.
Although his Magecraft aptitude was higher than his brother's, he hated the vile nature of the Matou family's magic. To save Sakura, the daughter of Aoi Tohsaka, he agrees to participate in the HolyGrail War. As a side effect of the Crest Worms, half his body is twisted and distorted.

The Matou family uses Worms in their Magecraft. In combat, they can be summoned and employed at will. There are various kinds, including the flesh-eating Blade Wing Worms that Kariya employs, and the Crest Worms that crawl around the Worm Pit.

In fact, at that point he had probably already decided that he had no choice but to bet everything on Byakuya conceiving an heir that would turn everything around. Unfortunately, in the end his longshot gamble backfired spectacularly, and instead of a miracle that would save his lineage, he got Shinji.

By the way, even Kariya's childhood friendship with Aoi was set up by Zouken, who had become aware of the Zenjou family's excellent hereditary trait long before the Tohsaka. However, due to Kariya turning his back on sorcery and getting cockblocked by Tokiomi, the old man's plans once more came to nothing.

…Well, Kariya bringing his beloved Aoi back to some horrid worm pit was never going to happen in the first place. Maybe if the Matou sorcery was a little more normal, he would have been willing to obediently accept his inheritance and become Tokiomi's rival for Aoi's affections.

For a makeshift magus, Kariya's suitability as a Master was exceptional. The fact that he was able to endure the maddened Lancelot's outrageous magical energy consumption for as long as he did is a feat truly deserving of praise. While he might have been better off if Zouken hadn't punished him by forcing him to summon a Berserker, well… I hate to say it, but the only reason Lancelot was able to fight Gilgamesh as well as he did was due to the parameter boost from being maddened. And given the single-minded devotion with which Kariya was pursuing Tokiomi, there's no way you could expect him to have the prudence to avoid that powerhouse team and survive to the very end. When all's said and done, as long as he carried the Matou spirit of putting grudges before everything else, he was probably doomed to failure no matter what.
