Is there any reason why Saber is still hiding that she was previously summoned in the 4th war under Kiritsugu?
Issei seems more upset that Shirou didn't follow up than he does over being stripped in the first place.

She probably didn't see it as necessary information. Not to mention speaking ill of a dead father is a dick move for anyone. Saber didn't like the guy at all because the way she sees it he betrayed her trust.
Except that that detail was already revealed in Fate and therefore there is no harm in throwing it out there in UBW at a logical point in time.
For example we know from Fate that Shirou knows projection not just reinforcement, so it doesn't feel like an asspull when he projects Kanshou and Bakuya for the first time in UBW even though he told Rin and Saber that the only thing he can do is reinforcement.

Saber's British people are not the British people of today. They were supplanted by the invading Saxons (who Saber was fighting), who were later supplanted by invading Normans.
If I remember right, the explanation given is that she didn't care enough to mention it since it wasn't important. She only mentions the important bit that it wasn't the first time she was summoned in that particular era.
It's already been proven that Issei is gay for Shirou.
