Teacher is far more trained than Shiki, his body isn't super human but his technique is beyond normal realms of perfection since he was trained like a Nanaya as a child to perfect one move. Kuzuki has Caster buffs, and he also has more actual training, compared to Shiki who's running off instinct.
With a solid mage giving him buffs, Satsujinki-Shiki could probably take a Servant.

Chaos isn't a fighter, he's just a defensive wall that rushes at you in different ways. Shiki admits that a true master martial arts user is probably more dangerous than Giant Akiha, since Shiki relies entirely on being skillful and fast, so meeting someone with the same shit but better means he'll lose. Shiki has an easier time with the big guys with no focus, or who think they're invincible, he has the hardest time with those people on his statue who can excel him in his fields.

Shiki cannot fight on par with even an average servant as well, so Nero's transformations did not reach that level. They are an imitation of beings since almost the dawn of man or other strange places, but how in depth that is was never explored. If he summoned a Dragon would it have divine mystery? Doubt it considering what we saw, so it comes off as just a physical imitation.
Even despite not reaching that level there's not many servants around that could ever beat Nero. One of the creators said Arturia could maybe Excalibur him away full, and Gilgamesh could do it by nature, but really not many.
Nero's main skill is being an absolute defensive wall, but because he's been invincible for so long he was the worst target for Shiki who had the worst ability for him.

Kuzuki isnt this. He is someone who has trained and mastered one of the most incredibly deceptive and devious martial arts around. He would utterly wreck Shiki, even without Caster's buffs. He'd probably also wreck Ryougi as well.
Not 100% certain but I think it is the day after they fight Kuzuki for the first time (day 10), you have an option whether you want to talk to Saber or Tohsaka, and the Tohsaka option leads to them talking about projection magic.
