The scene made a bit more sense in the VN because Caster continued pelting them with magic and Shirou/Archer were just yelling random shit at each other that made no sense.
They kept the banter but lost the tension of Caster shooting.

Ufotable changes really minimal things. For instance, Archer running around while carrying Shirou while Caster has poor accuracy.
And in the VN, Archer hit her with his swords, so he purposefully missed with Caladbolg, which he explained like a cocky fuck.
In this, it seems Caster blocked(?) his swords and got hit by Caladbolg.

His projection isn't limited to swords. He's just able to analyze and project swords instantly and with an insane level of mana efficiency. He can still project other things, and still much better then a typical magus, but it actually requires time and focus to do so.
