The series is more confident in its execution for them, so far at least. We also get significantly more Kiritsugu flashbacks, which is a treat in itself.

By making saber realize what's her fault and she would have great resolve and going saber lily, but she would still want to change the past. With great determination even if it cost the lives of innocent she would find her way to the grail.

And then shirou oppose saber, but their promise to end this war together and his seigi no mikata make shirou don't dare to make saber kill herself. For the ending, after knowing Illya is the grail, her desire to change the past take control of her and shirou will fight her. And just one more step to kill Illya, shirou instruct saber to stop, then a command seal is disappeared but saber didn't flinch. And then in great despair shirou instruct saber to kill herself.

The series works pretty well with the changes. The magic makes more sense, or they give more time to showing how it works. The scenes between the characters all have a bit more weight, this most episode nailed the problems with fathers both Rin and Shirou have, in a way that was better than the VN. It was arguably the best one so far, and it hardly had any fights.

Watching Shirou take a shot for Rin is amusing, it kind of nails the "Shirou is too dumb to live" sentiment that Rin was trying to drill into him earlier in the episode, but allows Rin to see it in a different way.

While I do agree that in HF, Shirou and Saber didn't argue that much, I felt like they were comrades/friends to a lesser extent. Especially since in HF, I don't believe that Saber and Shirou had that much interaction/conversation (on stuff other than the war) between each other. In UBW, you hear them talk a lot with each other about different things. One of the conversations in that route that stuck out to me was the one they had in the storage room (when Shirou was doing training with his "strengthening"). At a certain point, Saber talked about her knowing about a mage/warlock (in her time); where while she considered him a great friend, she also considered him a huge trouble that caused a lot of problems in her time. I don't remember any other time in the other two routes where Saber talked about things of her past that doesn't relate to her troubles (or drama unless someone who can remember can clarify).

The problem with Fate route is the same with Arc's route in Tsukihime.
They're intro routes. So, since you get all the meat in the other routes, the intro route just feels pointless (especially because many of the important explanations you got in the intro route get repeated in the other ones).

Nasu should get rid of the idea of intro routes and just make each route stand on its own and have them reveal their own share of important details and secrets.

As for the romance, that's sadly entirely Shirou'a fault. The guy is just plain boring (not as a character, since his issues make him interesting, but as a person, since he's rather dull).
That's why his romance with Saber and Sakura can come off as boring, since as far as relationship dynamics go, there's little to nothing.
It works well with Rin because of her personality. She knows how to deal with Shirou and how to play his buttons (he can also press her buttons well every now and then).

Romance in Fate was shit because there is no place for one. You can see that outside of fanfic that is UBW Good, Saber will never accept a quiet way of living with her loved one.

Other problem is that you can't have a good romance with Saber staying in this world because quality would be significantly diminished by the fact that in order for Saber to stay and keep on living with her ideals she would need a lot of prana which Shirou cannot provide and therefore asspulls would have to come out.
