No she couldn't. At full power, Excalibur takes almost all of *her* mana. She can't use it twice in a row even at the best of times unless she wants to disappear.

Saber won pretty easily once she had her full power restored. Archer could have won if he gave enough of a fuck. Also he lost to two regular human mages in different routes, Shirou in UBW and Sakura in HF. That's pretty pathetic.
After her Jason she just wants love and Kuzuki does as well but it is in no way limited to only always be him. Right situation a different man can take up that mantel. If anyone will suffer it is Kuzuki as he will continue being an empty husk as NO one but Caster can help him.

Fate route: Shirou would have died on the very first night and Rin wouldn't be able to give Saber back Avalon due to not knowing that it was inside Shirou the whole time. Without Avalon, Saber would lose to Gilgamesh. Rin probably wouldn't be able to withstand the Grail Mud like Shirou was able to as well.
UBW: Shirou would have died a long time ago and once again, both Saber and Rin would have no trump card against Gilgamesh.
Heaven's Feel: Sakura kills most of the Servants, Rin kills Sakura, everything's averted, Shirou still dies at some point.
Literally the only reason Shirou survives any of the routes is thanks to Saber.

I wasn't sold on Caster/Kuzuki pairing in F/SN and in the comedy spin offs like CP and the many Doujin circles it felt forced. After reading that sidestory origin thing in F/HA of Kuzuki's origin and when fought Gil they suddenly clicked for me.

The point is Cu didn't fight Gil equally, he just managed to not die against him for a while. He still lost, and the point is that loss would happen whenever Gil wants it to because all he has to do is use Enkidu and the fight's done.
