Without Avalon, Saber would lose to Gilgamesh. Rin probably wouldn't be able to withstand the Grail Mud like Shirou was able to as well.

UBW: Shirou would have died a long time ago and once again, both Saber and Rin would have no trump card against Gilgamesh.

Heaven's Feel: Sakura kills most of the Servants, Rin kills Sakura, everything's averted, Shirou still dies at some point.

Literally the only reason Shirou survives any of the routes is thanks to Saber.
