Now let's say you're Shiki, you have a special attack that can erase the enemy based on the simple fact that it's a target, that goes beyond the concept of HP, guages and Stats so it does effectively bypass God Hand.

In the game she is indeed weak, but as a servant itself she is strong. Her magecraft s EX level. And she is a soul which is created from the goddess of sun, Amaterasu nerfed version. She could defeat most servant. Her magecraft is a lot stronger than Medea. But a versatile servant like Berserker and Gawain during the day could beat her. And maybe even Saber with proper tactics since magic resistance is a good skill but still can't completely block her magic, or just give her Avalon.
