There's no real good answer. I'd say the Gundam Universe, but then you get shit like pokemon where there's encyclopedic entries with weights and heights for 700+ different fuckers.

Then there's the NGE universe which was bent over backwards a while back, so noone knows where shit is going.

Hell, if you count animation of western stuff, like Halo, you get a tonne of books, minigames, two ARGs, comics, CGI stories...

I'd say there's two different ways to talk about this. Things that have the most lore written with them, like expanded universe stuff, encyclopedias, etc. OR what things draw from the most pre-existing lore. The first is fairly easy to figure out, the latter not so much

Yes there is. If you constantly discuss One Piece and think about what's going to happen next, you really have no trouble, but the average One Piece reader will either need to look a lot of shit up in older volumes or just hope that Oda explains again what plot point from the past was about.
Heck, most of my friends didn't even realize that the Koala from the revolutionaries was the same Koala from Fisher Tiger's flashback, and I don't wanna know how many million OP readers there are in Japan who don't even know who Noland is and are confused by the all the Noland talk in the current arc

Technically, there's a shit ton of lore because there's so much background information, but when I think "deep," I think intricate, detailed, and sensible. Horizon is just stupid, though. It's not confusing because it's so carefully wrought, it's confusing because it's so fucking dumb that your brain immediately concludes that nothing could actually be THAT retarded, so it defaults to "I don't understand."

Not remembering one of the hundreds of characters Oda introduces isn't really what I would say is worth "re-reading just to understand it". That's really just a flaw of his where he thinks having a lot of characters is good world building, instead of making meaningful characters with actual personalities rather than cheap caricatures like we normally get.

I could barely name for you half of the random assortment of fodder villains and random townsfolk who exist solely for cheap emotional pulls that Oda has dumped into One Piece, and you're honestly no worse off for having forgotten them in terms of overall story.
