Correct me if I'm wrong here, but that I know of there isn't any way to resize the image without it being stretched considering they wanted it to go from the original size to 1600x900. Maybe there's a better method but I just use the "Resize Image" feature in Photoshop. I'm relatively new to photo manips though, so.

You're completely wrong. There are hundreds of ways to do that without stretching the image. You should google Photoshop tutorials, so you can get familiar with all the tools available.
