I heard the game was just rushed to just to oblige to the original contract made, which sucks because this game had a lot of potential and it feels so generic. But the spiritual successor NGBC plays a little better but it could of been a much better game.

I still like 2002, as dumb as shit is in that game though. It's a relatively back-to-basics KOF with a big cast and is mostly fine. It's no '98, but it's decent and it doesn't have fucking strikers.

2001 is hot ass (but it really does seem like Eolith tried, they just had zero fucking experience). Not the worst fighter I've played by a long shot, but it's not good.
2001's music is also lame as fuck for the dumbest reasons (what the fuck is with these sample choices, I can dig stupid sounding hard electronic music, but even in that context, the samples used are just fucking terrible).

2003 and XI have far looser and more enjoyable controls, which was what I always liked the series for. Controls which are too tight was why I never really warmed up to Street Fighter.

I can't attest to the arcade version but the PS2 version emulates well in PCSX2 in my experience, the only issue is the 3D stages are busted

The only stiff part I recall about that game is that it is really picky about the timing to press A+C or B+D to switch characters when you're performing a tag combo

KOF 2000 had probably my favorite soundtrack only because of all of the tracks you mentioned and Arashi no Saxophone 4 was good. The game gives me alot of feels since it was the last game made by the original SNK team. Especially that ending shot

XI is pretty lenient compared to 98 and 2002, from what I have played. The free cancels there are nuts and so are which normals can combo off what. But they got the tag mechanic down just right in that game, and the hidden characters and PS2 guests were great. Not quite 2000 Maniac Striker tier but still fucking awesome.
