Battle of Hoth and Skyhook Battle were 10/10 stages.
The on-foot levels were hit and miss, I actually really like the 2nd level on your pic, it has a great atmosphere and good level design, fun enemies too. Some others drag on a bit too much and aren't as exciting (the level before Xizor's Palace, the level where you face Bobba, etc).

Mysteries of the Sith is pretty awful. Just re-used assets from Dark Forces II, with very little added and an almost non-existent plot. That hidden Bespin level makes me wonder why they didn't just recreate more scenes from the trilogy and have that as an expansion pack instead. Would have been much better.

I really enjoy it. Thought it was a great game. I especially liked that you could skip most of the enemies, but you'd only get upgrades at the end of the level by getting a certain number of points from items and killing enemies. Also, all those unlockable characters and levels, not to mention unlike the PS1 version you can actually play as Darth Maul with his double-bladed lightsaber. For some reason it's getting a bad rap nowadays, but even now I still think its quite good.

Loved it when it came out but you could tell something seemed to be missing.
It had a cool identification system and it was fun finding the bounties and figuring out how to take them out.

I had X-wing VS Tie Fighter when I was a kid. I remember it being kind of sandbox-like? Like I remember just a list of missions, but there wasn't a story mode or anything.
Not as old as some games here, but for me it will always be Jedi Knight II: Jedi Outcast. Also, I have to mention Star Wars The Phantom Menace game. I know popular opinion is bad and game is nothing special in reality, but it's what introduced me to Star Wars basically.

There was a game I had for PC, trying to remember the name - you could choose which ship you played as and you could fly around doing stuff in space. There was an energy bar, and Tie fighters could disable weapons instead of just damaging the enemy ship. There was a wide range fo ships you could fly, too - I seem to remember B-wings and Tie Defenders.
