C64 Pirates!, Nostalgia version, is the definitive for me.
I liked the Amiga (not CD32) one the most. It looks nice and uses the mouse in a sane way.
Not a fan of the 3D remake. They added too much shit that complete altered the gameplay.
Most of the other versions are fairly similar with the biggest differences in looks and controls.

Closest you'll get is ocarina of time and Majora's mask, which is what the combat in dark souls is based on. Still very different games from it though. If you want something closer to dark souls youll want to check out zeldas 1 and 2 on the NES.
Castelvania 3D might be what you're looking for, but I haven't played it and have heard mixed things about how good it is.

I hate qte just like the next anon, but it was actually well done. Also game mechanics from the legend such as wallrunning with grapple, balancing on columns, jumping from bar to a bar were nicely implemented into the existing levels.
Given the choice, I'd take the precise player-centric controls and simple combat of the original, over the sloppy analog controls, hit-or-miss semi-auto platforming, and QTEs of Anniversary.
Crystal Dynamic's trilogy were decent games and Anniversary was a good attempt at a remake, but they're so different to play, they can't really be compared. I would have still liked a TR Anniversary 2, before they totally fucked the series beyond recognition, however.

Anyway I was super stoked about the N64. I was basically like those two kids from that internet video when I unwrapped mine on Christmas morning. Seeing Mario in 3D for the first time was pure fucking magic.
That said, I still continued to buy SNES games. I particularly remember getting Earthworm Jim 2, Bomberman 2, and Super Empire Strikes Back on the cheap from retail store. Around that time I started getting into game trading on this site called UGTZ (used game trading zone) where I would trade old NES, SNES, Game Boy, and N64 games for other games.
Though I have to admit that I was an RPG fan and not having any on the N64 sucked. I wanted to play Final Fantasy 7 SO FUCKING BADLY that I swallowed my Nintendo fanboy pride and bought a used PS1 (Which came with Wipeout 3) from that site I mentioned. I reckon from that point on I was a dual-system guy, which continued onto 6th gen by getting both a Gamecube and PS2.
N64 magazine was so based.
I still have the very 1st issue with the N64 promo VHS
